Don't use a bolt...chuck up a piece of 3/4" steel or something larger than 5/8", and turn (or file) a very slight taper on the shaft such that you can press the pressure plate onto the shaft, center drill the end so it can be supported with the tailstock, and then press the plate on and turn it. This will ensure that the pressure plate surface is reasonably close to perpendicular to the axis of rotation of the clutch. Use a bolt and questionable quality/accuracy may ensue.
