You are right. The OEM 100 fenders won't cover 1/3 of those tires. You will have to fabricate fenders to fit a 12" wide tire. either that or widen the OEM fenders.
Wyatt Compton and Dan Hoefler widened some round fenders, but they still didn't cover the whole tire, I think. If you widen a set, you can make them as wide as you want. Or you can sell the OEM round fenders for around $200, and fabricate what you need.
