If you are not concerned about looks I dont see why you couldn't use a piece of threaded rod completely across with a nut inside and outsde on each side.
That's what I was thinking. It's not that I'm not completely concerned about looks, but when there are already holes there, a couple acorn nuts aren't going to look any worse lol.

Maybe I'll try that first and see how well it works. Something's gotta be better than nothing.
